Ingredients:1 small yellow onion diced1 14.5oz can of diced tomatoes, drained3 Tbsp. olive oil1 lb boneless, skinless chicken breasts (I used chicken thighs since that was what I had on hand), diced into bite sized pieces1 cup of uncooked rice^^ CLICK TO READ FULL INGREDIENTS ^^Instructions: First step is Start by sauteing onions in 2 Tbsp. olive oil until they start to soften.
